Sicily brings us a glorious sun-drenched landscape at the crossroads of many culinary traditions that date back a millennium. The rocky coastline that gives way to long beaches, the turquoise tropical waters and the beautiful sunsets—these are some of the views you expect to see on a Mediterranean island, but then you bump into the sparse, rugged mountains that offer dramatic vistas and drastically different climates. This brings to our table a diverse selection of foods and ingredients. Sicilians always eat well and are fiercely proud of everything they produce.

The village of Olonzac welcomes us again! We have always drawn inspiration from French cuisine: the food, the methods and the style. When we reflect on our own cooking styles, we often find it is rooted in the French country tradition.
