Sicily brings us a glorious sun-drenched landscape at the crossroads of many culinary traditions that date back a millennium. The rocky coastline that gives way to long beaches, the turquoise tropical waters and the beautiful sunsets—these are some of the views you expect to see on a Mediterranean island, but then you bump into the sparse, rugged mountains that offer dramatic vistas and drastically different climates. This brings to our table a diverse selection of foods and ingredients. Sicilians always eat well and are fiercely proud of everything they produce.

When we reflect on our own cooking styles, we often find it is rooted in the French country tradition. Join us for a magical week in Morocco, cooking, tasting, and exploring the rich cultural heritage of Marrakech and Essaouira. Savour slow-cooked tagines, traditional street foods, varieties of couscous, and the whole vibrant complexity of Moroccan cuisines in the ancient city, the countryside, and by the sea. We’ll be rolling up our sleeves at cooking classes, formal and casual, connecting with local chefs and dadas (traditional cooks), and delving into spices and street foods. We’ll explore Marrakech’s timeless souks and Essaouira’s breezy coastal charms and marvel at the art and architecture in palaces and bazaars.
